Today I want to share a recipe that I love to make due to its simplicity and deliciousness! For all you taco lovers out there here below is a healthy alternative to use next time you are craving some spicy Mexican cuisine. The ingredients that I used are some of my favorite but if you like or dislike anything just sub something in or out! I topped mine with salsa, avocado, and hot sauce! #Fiesta in my mouth.
Ingredients:
- Ground turkey (10 oz,
cooked)
- 6 Multi-colored bell peppers
- 1 cup cooked brown rice
- 1 cup corn
- 1/2 cup black beans
- 1 small can of tomato sauce
- 1 small can of diced tomatoes
- 1 jalapeno
- 1 clove of garlic
- taco seasoning packet
- salt and pepper to taste
Directions:
- Brown turkey in skillet. Once cooked drained grease and then follow taco seasoning instructions.
- Cook brown rice following the directions on the label.
- Heat oven to 400 and move rack to the middle. Get out a medium baking dish and fill with a half an inch of water. Set aside.
- In a separate skillet sautee jalapenos and garlic for a couple minutes on medium heat. Add in cooked rice, turkey, and the rest of the ingredients. Reduce to a simmer.
- Cut the peppers by slicing of the tops. Next stuff the peppers with a cups worth of mix. Replace tops.
- Place peppers into the dish standing up and place lids on top.
- Put dish in oven and cook for 15 minutes.
- Let them cool for 10 minutes and top with your favorite foods! I suggest salsa, hot sauce, guacamole, and cheese!
